Red Bark Rub was born from the same fires that smoke our Mangalitsa pork. It’s how we build the signature mahogany bark you see on our coppa, shoulders, and ribs — the flavorful crust that locks in juices and turns good meat into something special.
Blended in small batches on our Texas farm, this rub combines sweet paprika, ancho chili, and turbinado sugar for color and caramelization, with cracked black pepper, garlic, and a touch of cayenne for balance and heat. When the smoke rolls and the fat starts to render, it forms that deep red bark every pitmaster is chasing.
