We raise purebred heritage Mangalitsa pigs — a breed renowned for exceptional marbling, rich fat quality, and old-world pork flavor. Our hogs are slow-grown over 16+ months on open pasture, living outdoors as hogs were meant to — never rushed through confinement systems.
Just as important as how they live is what they eat. Our Mangalitsas are finished on a clean, non-GMO, soy-free diet formulated to develop healthy intramuscular fat — the kind that creates natural tenderness and deep, buttery flavor.
Each El Jefe loin is hand-trimmed, lightly smoked, and finished with our house Red Bark Rub, delivering bold flavor, beautiful marbling, and a texture that simply does not exist in commercial pork.

Slice into thick, double-bone chops and grill to an internal temperature of 135°F for a perfect medium-rare finish. Rest generously, dust lightly with SPG-A, and serve like a boss.
