El Jefe — Whole Bone-In Mangalitsa Loin

The Boss Cut • Heritage Breed • Pasture Raised • Intentionally Fed

When you want to make a statement, this is the cut that does the talking. El Jefe — “The Boss” — is our signature whole bone-in Mangalitsa loin and the crown jewel of Honey Pot Farmstead.

We raise purebred Mangalitsa pigs, a heritage breed known for exceptional marbling and old-world pork flavor. Our pigs are slow-grown over 16+ months on open pasture, living outdoors as hogs were meant to, not rushed in confinement systems.

Just as important as how they live is what they eat. Our Mangalitsas are finished on a clean, non-GMO, soy-free diet formulated to develop healthy intramuscular fat — the kind that creates natural tenderness and deep, buttery flavor.

Hand-trimmed, lightly smoked, and finished with our house Red Bark Rub, this 7–9 lb bone-in loin delivers bold flavor, rich marbling, and a texture you won’t find in commercial pork.

Your Pork Shouldn't Be White

Conventional pork is bred for leanness, resulting in pale meat lacking flavor and moisture. One look at our Mangalitsa pork tells a different story – the meat is richly red with beautiful marbling throughout. This isn't just a visual difference. The deep color indicates higher myoglobin content and intramuscular fat, translating directly to more flavor and moisture in every bite. When you cook our pork, you'll notice it stays juicy and tender, even if you accidentally overcook it a bit.
